The Coratina olive takes its name from the city of Corato, a village in the province of Bari. It is one of the oldest and most long-lived varieties of Apulian olives, which today is grown not only in Puglia but also in other areas of southern Italy.
The plant easily adapts to various types of soil, even the most calcareous ones. It is a very resistant variety that is particularly suitable for organic cultivation where no chemicals are used.
When tasted, the Coratina EVO oil is a mix of bitter and spicy, qualities that give a much appreciated strong taste. A aromatic and fruity scent, with artichoke notes, adds a touch of the Apulian territory.
It has a yellow color with golden reflections (tending towards green).
The harvest period is set between October and November. After harvesting, the Coratina olives are processed in the mill with the cold extraction technique.
This technique allows to preserve all the organoleptic characteristics, including minerals and antioxidant substances. The result is a superior EVO oil.
