The Blend represents the oil art of knowing how to carefully select the different cultivars, with professional skills and experience, of mixing the different oils so that each oil is able to give its individual contribution to the final product.
A master oil maker therefore has the ability to harmonize the properties of the different qualities of olives, knowing the characteristics of the "cultivars" and balancing their percentages.
Our Blend comes from the skilful assembly of olives of the Coratina, Ogliarola and Leccina varieties.
The harvest period is set between October and January. After harvesting, the olives in the Blend are processed in the mill with the cold extraction technique.
This technique allows to preserve all the organoleptic characteristics, including minerals and antioxidant substances. The result is a superior EVO oil.
