A skilled chef can transform fresh ingredients into a very inviting dish, but to best enhance it, it should be accompanied with the most suitable extra virgin olive oil.
Enhance yes, but without covering the original flavor. Whether it's red meat or delicate velvety, the oil used must have specific characteristics. A more fruity oil should never be used like a more bitter one and the same for all other types.
In order to enhance your dishes we have decided to create 4 different types of EVO oil (3 of which are Monocultivars), each with specific advice for pairing it with the correct dishes. In this way you will be able to immerse customers in a sensorial journey through the typical flavors of the Apulian territory.
What is Monocultivar: unique qualities and flavours
The term Cultivar refers to the different varieties of oil olives. Therefore a Monocultivar oil (a word that derives from the Greek "Monos", which means "only", "unique") is produced using a single type of olive.
The absence of contaminations (mixtures of oils called Blend) allows to maximize all the characteristics of the selected olives, producing an oil that boasts superior aromas and flavors, linked to the territory of origin, and fully preserves its nutritional and organoleptic properties .

Monocultivar in Italy
In Italy there are approx 500-550 types of extra virgin olive oil cultivars. Despite this, most of the oil sold is Blend, or a mixture of various types of olives.
This is due to various factors, including the fact that the Monocultivars are extremely subject to the weather conditions of the harvest year (which may also vary in the harvesting methods). It follows that this oil can be slightly different from year to year.
The choice between a Blend oil and a Monocultivar must be made according to the dish you want to prepare: by combining the ideal oil you can in fact exalt the flavors impeccably, without the risk of being too delicate or invasive.

Our oil, with your logo on the label
We offer our customers the possibility to customize the labels of the EVO oil bottles by inserting their own logo.
This solution, available only for orders requiring a minimum order of 200 bottles, in addition to being used by restaurants and hotels, offers the possibility for companies and professional firms to pay homage to their customers with a high quality product branded according to their needs.
